    This Sausage and Peppers Pasta recipe is such an easy dinner! Sausage, peppers, onions, mushrooms and garlic combine with diced tomatoes and white wine to make a simple Italian meal. This is a delicious, quick weeknight dinner for families and a great date night meal for couples!

    Ingredients

    • 2 Tbsp. of olive oil
    • 1 medium onion, sliced
    • 1 medium pepper, sliced
    • 1/2 lb. of mushrooms, sliced
    • 3-4 cloves of garlic, minced or pressed
    • 1 lb. of Italian sausage links, sliced (I used sweet but I bet this would be fabulous with spicy)
    • 1/2 cup of white wine (or chicken broth)
    • 1 28oz. can of diced tomatoes (this creates a moderate amount of sauciness, which for me was the right balance. If you like a ton of extra sauce, you might consider adding a small 8 oz. can of tomato sauce or puree as well).
    • 1 tsp. of salt + a little extra to taste for your veggies at the beginning
    • 1/4 tsp. of black pepper + a little extra to taste for your veggies at the beginning
    • 9 oz. of fettuccine (fresh, if it's available)
    • Romano cheese and crushed red pepper for sprinkling
